It fermented with their own strain of yeast and aged in new and used 50/50 French and American oak barrels for 12 months. 2016 was a very complete vintage, with quality and volume, which is not very common. There are some spicy and smoky notes, and there is good freshness in the palate, which is medium-bodied, with round tannins and very tasty flavors.

It has good freshness and a lively palate with focused flavors and a long finish.

94/100 Punkte Robert Parker Apr 2019 The red Callet 2017 Sòtil, which means roof in Mallorquin, wants to show lightness and freshness, a more ethereal wine, if you want the opposite of their Tripsol. The grapes are selected from vines in Felanitx on red soils and part from the 67-year-old d#Es Pou de Sa Carrera vineyard in Porreres. 2017 was an unusually warm and early harvest (they started on the 9th of August, their earliest ever). The mostly destemmed and uncrushed grapes with 10% full clusters fermented in open-top 500-liter oak barrels and had a 20-day maceration. The wine matured in a combination of barriques, amphorae and stainless steel tanks. The wine has moderate alcohol (12%), a pale bright ruby color and an intoxicating nose of flowers and herbs#violets, lilies, rockrose, thyme and all things Mediterranean. 97/100 Punkte Robert Parker April 2020 The more delicate, ethereal and fine 2016 La Dama is also pure Garnacha from old head-pruned and dry-farmed vines from different plots in the village of San Martín de Unx on limestone-rich soils. The vines are worked organically and biodynamically, and the fermentation and work in the vineyard is with the natural yeasts and with as little intervention as possible, as they want to express the place and the conditions of the year. 2016 was a cooler year with good rain, perfect and slow ripening of the grapes that kept good acidity. The wines are fresh, floral and expressive, especially this one#it exploded with aromas of violets as I pulled the cork and decanted the wine. This has to be the most delicate, ethereal and mineral vintage of La Dama so far.
