It has great concentration, but at the same time, the wine has higher acidity, which makes it very balanced. It aged sur lie for 56 months before it was disgorged. This is a little more oxidative of the three, with a little more development, more Mediterranean. It's very tasty.

This is a truly smart assemblage of two contrasting vintages (2008 and 2009) that takes the best of both to compose something new and complete. It's an excellent cuvée indeed. On the palate, the wine is medium to full-bodied, deep and tight-knit, with superb concentration and structural tension, built around racy acids and concluding with an attractively chalky finish. In keeping with the vintage, this is quite a tensile, reserved Grande Sendrée, but its potential is considerable. Readers should plan on forgetting the 2008 for another four or five years if they wish to catch it at the beginning of its plenitude. It's a blend of 55% Pinot Noir and 45% Chardonnay, one-third of which was fermented in barrel; it was disgorged after seven years sur lattes with five grams per liter dosage.

This comes from three separate vineyards and is always a little riper, more developed, and in this vintage, it combines power with freshness, like in the best vintages. The 2007 vintage was dry, and Recaredo's vineyards yielded 33.5 hectoliters per hectare, when the appellation of origin allowed up to 88 hectoliters per hectare that year. The wine has 12% alcohol and an extremely low pH (2.96), which means very healthy acidity. The Xarello fermented in oak barrels and the Macabeo in stainless steel. The citrus colored wine offers a highly refined and complex bouquet of white fruits, brioche, bread and hazelnut. Pure, fresh and straight on the palate, this is a highly elegant, finessed and bone dry méthode champenoise with lingering salinity and very nice, very subtle astringency on the finish. Lovely, pure and fine, this is really remarkable in its style. One of the finest sparkling wines I have ever tasted from Austria. Bottled June 28, 2016, disgorged in May 2018 and tasted in October 2018. Dosage is two grams per liter.
