    The exceptional NV Adorado is a product of the past, as it's a wine that is said not to have been touched since 1967. It's a blend of the three classical grapes from Rueda#Verdejo, Palomino and Viura. There is more volatility, more intensity and pungency here, but also more finesse and depth and even more elegance. It matured in a solera system for a very long time, and initially, it must have been aged under flor yeasts. It's 16% alcohol but was originally fortified to 17%, and it's very dry and tasty. There are some 2,000 bottles of this, apparently only magnums. Wines like this are almost eternal.

    The second wine in the price hierarchy is the 2017 Almirez, produced with vines aged 10 to 35 years old from their 72 hectares of vineyards in the villages of Valdefinjas and Toro. It fermented in stainless steel and matured in French oak barrels, 30% of them new, the rest second use, for 14 months. 2017 is one of the driest years with one of the earliest harvests ever, but surprisingly enough, the wines feel lighter, fresh and aromatic, expressive and open and do not show any heat. Furthermore, it feels like a fresher year in the sense that the wine integrates the oak quite well. The change here, as Marcos Eguren explained, has been in the toast of the barrels, something they started in 2015; they have lighter toasts, from a long and slow toasting of the oak, and the barrel respects the fruit a lot more. Fine-tuning continues...

    The second vintage of the top-of-the-range single-vineyard Tempranillo is the 2015 Horcajo, which reached 15% alcohol in a warm and dry year like 2015. It went through malolactic in barrique and matured in French oak barrels for 18 months. This is the most powerful and concentrated of their wines; it's quite dark and has aromas of dark fruit, roasted coffee and toast with an earthy touch and a hint of smoke. The palate is full bodied, round and lush, with decadent flavors, baroque, with lush fruit and generous oak in a very showy style.

    The other single-vineyard Tempranillo is the 2011 Malleolus de Sancho Martín, always the more backward of the two. It is sourced from a small (0.84-hectare) single plot of vines planted in 1964 on chalk soils that provide more austere wines. It went through malo in French barriques, better suited for wines from chalky soils. Like the rest of the top of the range, it matured in French oak barrels for some 18 months before bottling. Although it feels a little reticent, it slowly develops notes of minerals, red and black fruit, spices and nicely integrated oak. The palate also shows good integration, balance and elegance, with chalky tannins that are very fine and a finish where the oak-related flavors are intermixed with subtle minerality, giving it a little salty sensation. It will be much better with some time in bottle. Only 2,500 bottles produced.

    The 2014 Malleolus de Sancho Martín is always the more backward of the two single-vineyard bottlings. It is sourced from a small (0.84-hectare) single plot of vines planted in 1964 on chalky soils that provide more austere wines. It fermented with yeasts selected from that same vineyard and it went through malolactic in French barriques, better suited for wines from chalky soils. Like the rest of the top of the range, it matured in French oak barrels for some 18 months before bottling. The limestone soils provide for a more austere profile and it also seems like the wine takes the oak in a different way and feels better integrated. The palate has the chalky mouthfeel of the tannins, dry and serious, not as exuberant as the Valderramiro, but more focused and precise, with a long life ahead of it.

    The organic 2018 Nosso wears the subtitle "Verdejo Ecologico Natural" and had no added sulfites. It has some cereal-like aromas, with a lactic hint, not very varietal, but clean and not showing any deviations. The palate is balanced, with good freshness and a marked bitter finish#to me, that's the signature of Verdejo.

    The second vintage of a selection of the best plot of Tempranillo in a given vintage, the 2016 Vendimia Seleccionada, was sourced from the Viñedo Turquilla (in 2015 it was La Mira), which is mentioned on the label. It fermented with their own strain of yeast and aged in new and used 50/50 French and American oak barrels for 12 months. 2016 was a very complete vintage, with quality and volume, which is not very common. There are some spicy and smoky notes, and there is good freshness in the palate, which is medium-bodied, with round tannins and very tasty flavors.

    The very dry 2012 vintage produced a powerful 2012 Victorino. It's a pure Tempranillo, known here as Tinta de Toro, from ancient, head-pruned, ungrafted vineyards on clay-rich soils. Some ten separate plots contribute grapes to this wine. These old vines have very low natural yields, ten hectoliters per hectare in 2012. The destemmed grapes fermented with yeasts selected from their own vineyards and the wine matured for 18 months in brand new French oak barrels, where it also underwent malolactic fermentation. I found the 2012 very earthy with notes of graphite and hints of peat, as well as some balsamic aromas of menthol and licorice, and a core of black cherries and plums; the oak plays a secondary role in the shape of spices and neatly folds into the voluptuous fruit.     I also tasted the 2017 Victorino, from a year that was very different from the warm and dry 2017, as 2016 was cold and wet and saw a very late and slow picking because of the slow and late ripening of the fruit. Fermentation and élevage were the same (20 months in 100% new oak), so the differences are due to the vintage conditions. I was very surprised by this 2017 (as with the rest of the 2017s from this address), as I found a fresh and balanced wine, perhaps a little lighter, with round and fine tannins. There are still oak-related aromas and flavors, but there is less toast (they use a different toast for the barrels), and the wine should integrate it with a little more time in bottle. But it should be approachable while you wait for the 2016.
